Shrove Tuesday is fast approaching! Are you as excited as I am for it? I absolutely love pancakes and by extension, crêpes. I have fond memories of Sunday afternoons with my mum in the kitchen, making crêpes and filling them with chocolate spread, jam and sugar. It’s been difficult trying to come up with a vegan crêpes recipe that I was happy with, but I think I have finally found the one!
So, without further ado, here’s a vegan crepes recipe for you, if you’re looking to switch things up this Pancake Day!

Ingredients to make this vegan crêpes recipe
We’re using quite a lot of easy alternatives in this vegan crepes recipe to make it as easy as possible to make! I’m not a big fan of complicating vegan bakes and cooking, to me it needs to be as efficient as possible. Crepes are already super easy to make, and this vegan recipe is no different, crepes without eggs and milk can still be delicious.
We’re using our classic flour and plant milk as our base. The cornflour helps to make the crepe light and fluffy. The soya yogurt is to replace the eggs; we don’t need anything stronger to bind the batter like a cake recipe, all this does is help retain the moisture in the crepe. And finally, as an optional ingredient, we can add in some rhum. If you’re not into alcohol, you can completely skip this step; all it does is add some extra flavour to the batter, to make the best vegan crepes!
Recipe
Step 1. Sieve the flour and cornflour into a bowl.
Step 2. Make a “well” in the middle of the dry ingredients and add the two tablespoons of oil and the plain soya yogurt, and combine.
Step 3. Slowly add the milk, a little bit at a time to avoid lumps, and stir until the batter is smooth.
Optional steps: add a cap of rhum to lightly flavour your crêpes if you feel like it! And if you’re able, let the batter stand for an hour at room temperature; if not, no worries, you can start making your crêpes straight away!
Step 4. Heat up a medium-sized frying pan or crêpe pan. Grease it with a little oil, add a ladle of batter to the pan, spread the batter evenly and cook your crêpes for a couple of minutes on each side until golden.
Step 5. Serve with your filling of choice!
Vegan French Crepes Recipe
Ingredients

- 50g of cornflour
- 650ml of plant-based milk - I used oat for this batch
- 100g of plain soya yogurt
- 30ml (2 tbsp) of neutral oil (sunflower or rapeseed)
- 10ml of rhum (optional)
Instructions

Vegan Crêpes Recipe: 2 tips to success
Mastering the art of the perfect vegan crêpe recipe is something I’ve been working on for a long time! I have two crucial tips for this; you may have read or heard them before but they’re worth emphasising if you’re looking to make the perfect crêpe!
1. A hot pan. My first tip would be to make sure your pan is hot enough before pouring in your batter to make your first crêpe. My first crêpe used to be a big fail every single time I would make it, and I realised a little while ago that it was because my pan was too cold still to start making the crêpes! To make sure your pan is at the right temperature, simply put a drop of water on it: if it rolls without sizzling, it’s not quite where you want it yet, but if it sizzles and creates smoke, you’re ready to go!
2. A non-stick pan. My second tip is to use a non-stick pan, if you’re able to. I find that traditional pans make your crêpes stick and tear, even with a well-oiled bottom. Choosing a non-stick pan as well as a well-oiled bottom will help ensure that your crêpe peels away from the pan without sticking and therefore breaking!

I am definitely going to try this recipe. I have to admit though, I only eat crepes and pancakes for the Maple syrup. Really I have crepes with my maple syrup, not the other way around.
